There's a bit of green in this dish. A wee accent counts right? Once again I have failed to jump aboard the holiday-food-party bandwagon. What the heck; you'd think a food blogger would be all over that stuff! Green errrything, but nope. Alas, my festive side fails to show up the party. Apparently it's as hermit-like as my real self! I guess that makes sense. Do you get in the celebratory spirit on St. Patrick's Day by making green food? When I was a kid my mom made green eggs. It made me uneasy. I don't like food to look as it shouldn't; even the green rice krispie treats put me off. 

I am currently drinking matcha as a write this, in a green cup nonetheless... and that should certainly count for something. I got green inside me. I think I'll tell people that when they try to pinch me for wearing all black. It should go over real well.

Spicy Sesame & Peanut Noodles

This is a scrumptious and speedy dish that only takes as long as the noodles to cook! A spicy and sweet creamy peanut butter and fragrant sesame blender sauce is tossed with chewy spaghetti noodles and fresh, parboiled broccoli rabe for a comforting meal. I hope this will be a new staple in your home, as it is in ours!

Ingredients

  • 1 lb dried spaghetti noodles
  • 1 bunch of fresh broccoli rabe, florets and stems chopped
  • ¼ cup white sesame seeds + more for garnish
  • ¼ cup sesame oil
  • ¼ cup + 2 tbsp soy sauce
  • ¼ cup rice wine vinegar
  • 3 tbsp vegan granulated sugar
  • 3 tbsp sliced fresh ginger
  • 2 heaping tbsp creamy peanut butter
  • 4 large garlic cloves, rough chopped
  • 1 ½ tbsp fresh garlic chili paste, to taste
  • 1 tbsp fresh lime juice
  • 4 fresh green onions, sliced

Instructions

  1. Bring a large pot of salted water to boil over high heat for the pasta. Cook according to the package, about 9 minutes, until al dente. When there’s about 3 minutes left for the noodles to cook, add the chopped broccoli rabe to parboil. Strain the noodles and broccoli rabe; return to the pot and set aside.
  2. Meanwhile, in a small frying pan toast the sesame seeds over medium-low heat for about 5-8 minutes until slightly golden brown and fragrant, stirring frequently (taking care not to burn). Place in blender once finished.
  3. Add the remaining ingredients in the blender along with the sesame seeds, excluding the green onions. Blend on high until super smooth. Stir into the cooked pasta and broccoli rabe until well combined along with the green onions. Serve warm. These noodles are also great chilled!

I got real worked up about the fact that the USA is the only first world country with no mandated paid maternity/paternity leave. I even wrote my employer's HR department to champion a paid maternity leave program. They were like yeah... no. Hey, if you don't take action you can't really blame anyone but yourself for not trying to change things for the better. Take action and let congress know that it's a pretty messed up situation. Chipotle Maple Sweet Potato Burgers

These are my new favorite burgers.

They are absolutely amazing. Perfect texture? Check. Sweet and spicy? Check. Super healthy? Check. I know there are a scrillion-bajillion sweet potato burger recipes out there, however, with buddies like maple, chipotle, pecans, and oats these guys are truly unique. An epic fall flavor combination, if I do say so myself.

You'll see a departure from my usual photography in future posts. During Alaskan winters it gets dark at about 4 pm. Thus, dusty artificial lights and lamps are summoned from the closet, hiding from the midnight sun of the summer.

It's kind of fun to play around with lighting. I'm not terribly experienced with lights, but luckily Todd is very fluent in these things. He helped me capture the spotlight effect for these photographs. I hope you enjoy the seasonal style!

Chipotle Maple Sweet Potato Burgers
These perfectly textured vegan, sweet potato burgers have a hint of maple sweetness and a smoky chipotle kick.
Ingredients
  • 2 medium sweet potatoes (about 1lb. 10 oz.), diced small
  • 1 Tbsp. olive oil
  • 1 medium yellow onion, diced small
  • 1 large garlic clove, minced
  • 1 ½ cups quick cooking oats, dry
  • ¼ cup pecans, minced
  • 2 Tbsp. nutritional yeast
  • 2 Tbsp. ground flax seed
  • 1 tsp. kosher salt
  • ½ tsp. chipotle chili powder
  • ¼ tsp. ground black pepper
  • 3 Tbsp. maple syrup
  • 8 hamburger buns
Instructions
In a medium saucepan, add the diced sweet potatoes and cover with water. Add a dash of salt and bring to a boil over high heat. Then, reduce to low and simmer for about 15 minutes until very tender. Drain and set aside for later.In a medium frying pan, heat the olive oil over medium-low. Add the onion and garlic and sauté for about 10 minutes, until the onions are brown and fragrant. In a large bowl, add the oats, through and including the pepper. Whisk well to combine. Add the boiled sweet potatoes and the onion mixture as well as the maple syrup. Using a wooden spoon, mash the sweet potatoes and mix everything together very well. Preheat oven to 400 F and line a baking sheet with parchment paper. Coat your hands with a nonstick cooking spray and form the burger mix into eight large patties. Arrange on the baking sheet in a single layer. Bake at 400 F for about 45 minutes, turning the patties over halfway through. Once done, remove from oven and allow to rest for about 5-10 minutes. This will set the patties. Serve hot, with BBQ sauce! Freeze the leftovers for a quick meal later.

Perdue has been forced to remove "humanely raised" labels from it's packaged chicken flesh. "..undercover investigations have shown that Perdue's chickens are raised in a space the size of a sheet of paper, crammed with others so tightly that they suffer broken bones that go untreated, and are placed in sheds that reek of ammonia." Who would support such atrocities? It's really mind-boggling. Read more about it here

Sophisticated Chocolate Chia Pudding

Sometimes you need something sweet for breakfast.

Sweet, but still healthy! I may have made this for breakfast but it's telling me that it would like to be classified as a dessert. Who am I not to grant such a wish? 

This pudding is an omega-3 antioxidant powerhouse, thanks to the chia seeds and the cocoa powder. Chipotle chili powder adds a spicy little bite and a hint of smokiness. Crunchy cacao nibs top it off!

Sophisticated Chocolate Chia Pudding 

Inspired by Our Paleo Life

Serves 1 

  • 1/2 cup of cartoned coconut milk (I like Silk)
  • 1 Tbsp. unsweetened cocoa powder
  • pinch of salt
  • dash of chipotle chili powder
  • 5 drops of liquid stevia (or sweetener of choice)
  • 2 Tbsp. chia seeds
  • 1/2 Tbsp. cocoa nibs for topping (optional)

In a small bowl or pyrex measuring cup whisk together all the ingredients except for the chia seeds and cocoa nibs. Be sure to whisk enough to incorporate the cocoa powder into the milk.

Produce On Parade - Sophisticated Chocolate Chia Pudding Then, transfer to a small serving bowl and stir in the chia seeds. Place in the fridge, covered with saran wrap, for about one hour.

Halfway through, stir carefully to ensure that all the chia seed clumps are broken up.
