Effortless Thai Pasta

I don't always feel like cooking. Sometimes all I want to do is throw everything in a pot, cover it and in 20 minutes have dinner ready. Pouf! Like magic! Oh wait, that is what I did last night. Well pretty much, there's some occasionally stirring that needs to happen but I hardly call that work. And just look, how delightful. Sometimes effortless is the way to be. This thai pasta couldn't be easier. Indubitably. No fuss. It's sort of like a straight-up delicious, albeit bastardized version of pad thai. If you've got a family member or friend that is a little unadventurous or maybe even a bit naive with regards to the vast offerings of the largely diverse culinary world...or is just scared to try new things, this is a good dish to start with.

It's like pad thai, Americanized. I truly hate myself for even thinking let alone saying that, but it's what comes to mind. I apologize to every pad thai dish I've ever made.

Produce On Parade - Effortless Thai Pasta

My pasta is somewhat greenish because I used a spinach fettuccine, as that was all I had on hand, but of course you can use whatever fettuccine you want!

Effortless Thai Pasta

Serves 4-6

  • 12 oz. dry fettuccine (I used a spinach version)
  • 4 1/2 cups of vegetable broth 
  • 1 large carrot, julienned 
  • 1 red bell pepper, julienned
  • 4 green onions, sliced thinly
  • 4 garlic cloves, minced
  • 2 Tbsp. peanut butter
  • 2 Tbsp. fresh minced ginger
  • 2 Tbsp. tomato paste
  • 1 Tbsp. brown sugar
  • 1 Tbsp. hoisin sauce
  • 1 Tbsp. soy sauce
  • 1 Tbsp. vegan worcestershire sauce 
  • 1 Tbsp. apple cider vinegar
  • 2 tsp. rice vinegar
  • 2 tsp. fresh lemongrass paste or minced
  • 1/2 tsp. fresh chili paste
  • 1/2 tsp. turmeric 
  • 1/2 lime, juiced
  • crushed peanuts, for garnish
  • chopped cilantro , for garnish

In a large soup pot, add all the ingredients except for the lime juice, peanuts and cilantro.

Produce On Parade - Effortless Thai Pasta Produce On Parade - Effortless Thai PastaThe noodles won't be all the way submerged, and thats okay. Cover the pot and bring to a boil over high heat. 

Produce On Parade - Effortless Thai PastaThen, stir to combine and push the noodles down a bit. Reduce to a simmer and allow to cook over medium-low for about 10-15 minutes. Be sure to stir it every few minutes. 

After this time, the noodles should be al dente. Uncover and allow to cook for another few minutes, stirring occasionally, until there's only about 1/2 inch of sauce on the bottom (or however much sauce you prefer). Remove from heat and stir in the lime juice.

Bob gets a lot of broccoli spears, carrot tops, sweet potato ends, etc. It's kind of like having a giant bunny around. However, I do like to have a dry dog treat to bring with me on his walks. He gets two a day, walks that is. I purchased these from Amazon. I'm not in anyway affiliated with Amazon or Old Mother Hubbard, I just happen to like both. Bob loves these splendid vegan treats!

No Chicken Vegan Pad Thai

I. Love. Pad. Thai. Love it! I've made one or two pad Thai dishes since becoming vegan. They were both super healthy and "noodle-free." While still good, I've decided that pad Thai is not to be messed with. It's meant to have noodles. It's meant to have chicken...well...grain-meat chicken. Vegan chicken. It's meant to have a rockin' sauce with cilantro and mung beans and crushed peanuts perched atop! Yum! This No Chicken Vegan Pad Thai has all that and a bag of chips. Featuring steamed broccoli and sliced grain-meat chicken. A robust homemade sauce coats the rice noodles, topped with crushed peanuts, mung beans and fresh cilantro. 

It's quick, simple and totally delicious. I have to make it in fairly small quantities or before I know it, I'll have devoured five servings of rice noodles. Two ounces per serving?! What is that? That seems pretty darn skimpy to me...that's all I'm saying. 

You have to try this. It's soooo good. One of my favorite dishes!


No Chicken Vegan Pad Thai

Inspired by Vegetarian Ventures

Serves 2-3

  • --Sustenance--
  • 1 head of broccoli, florets only and chopped
  • 8 oz. dry stir-fry style rice noodles
  • 1/2 Tbsp. olive oil
  • 3 vegan grain-meat chicken breasts, thinly sliced
  • 2 garlic cloves, minced
  • 4 green onions, thinly sliced
  • --Sauce--
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. tomato paste
  • 1 lime, juiced
  • 1/8 tsp. garlic powder
  • sprinkle of crushed red pepper flakes
  • --Toppings--
  • fresh cilantro, chopped
  • crushed peanuts 
  • fresh bean sprouts

Begin by steaming the chopped broccoli until bright green and just tender. When ready, remove from heat and set aside until ready to use. 

padthai (1 of 10)Bring a medium pot of water to boil and follow the directions on the package for cooking the rice noodles. Usually this means once the water is boiling, add the noodles, remove from heat, cover and allow to sit for 10 minutes. Drain and set aside until ready to use.

padthai (2 of 10)While the noodles are doing their thing. Heat the oil in a large saute pan and and in the garlic and the sliced grain-meat chicken. Saute until the chicken is heated thoroughly and the garlic becomes fragrant. 

While the chicken is cooking, add all the sauce ingredients together in a small bowl and whisk until well combined. 

When the noodles are finished cooking, add them to the heated chicken.

padthai (4 of 10)Add in the broccoli and the sauce and stir everything over low heat for a minute or two to heat. 

Serve warm and topped with fresh cilantro and crushed peanuts!
