Windy Hearth Stew

I love it when I stumble upon a dish that is so perfect, it'll be entered into the regular rotation for dinner. This is one of those allstar recipes. I love this soup. It may look like a long list of ingredients, but it comes to together very easily. It's pretty hands off too, which is always good.  The flavors in this stew can't be beat. Rice, sprouted beans, spinach, and sweet potato all make a debut, offering up loads of wholesome protein and fiber. There's ample seasoning suggested by turmeric, cumin, and savory. Rich and silky coconut milk make this stew delightfully creamy. This dish is hearty, delicious, and the perfect balance between rustic and modern.

My decision to call this dish Windy Heath Stew came to fruition based off the fact that it's been insanely, insanely windy around here lately. Yesterday, I came home to every single ski and pole crashed on the ground beside the house. I guess that's what I get for not putting them away? In the loft, the windows were being battered so hard that it actually knocked a large, multi-photo frame off the windowsill.

After picking up the wreckage, I searched the house until I found Bob cowered on his bed, in the corner, tucked into a tiny ball of fur and limbs. He has a strong aversion to wind, poor thing. He's basically a big chicken. When I let him out the front door, he looked around sketchily with his ears back flat against his pinhead and then nervously sprinted to the back to door to be let inside at once. Knocking loudly at the door. Yes, he seriously knocks at the door. Sometimes more urgently than others.

Todd had some errands to do after work, so there I found myself...just Bob, the wind, and me. While making this soup, I couldn't help the feeling that I was in a storybook in which the wind was some evil omen and all I was trying to do was cook up some hot and hearty stew in my apron, over the oven hearth for my companion and me to fill our bellies with. Why yes, on occasion I might have a bit of an overactive imagination. Why do you ask? Oh and also, in this imaginary tale...I don't have an electric rice cooker. Just ignore that bit.

Windy Hearth Stew

Serves 8

Notes: Feel free to use any type of rice and/or sprouted beans you'd like. Also, this soup would probably freeze well. 

  • Rice:
  • 1 cup red rice, dry
  • 2 cups water
  • pinch of kosher salt
  • Aromatics:
  • 1 Tbsp. coconut oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 tsp. ground cumin
  • 1/2 tsp. ground savory
  • 1/2 tsp. ground turmeric
  • Sustenance:
  • 10 oz. frozen spinach, thawed
  • 6 cups water
  • 1 medium sweet potato, cubed small
  • 2 cups dried sprouted beans (I use TruRoots Sprouted Bean Trio)
  • 2 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • Conclusion: 
  • 1 Tbsp. liquid amino acids or soy sauce
  • 1 Tbsp. balsamic vinegar
  • 1 15 oz. can of full-fat coconut milk

First, cook the rice. I cook mine by combining the rice, water, and salt in an electric rice cooker and allowing it to sit for about 45 minutes. Please cook the rice according to your package and/or rice cooker. 

Produce On Parade - Windy Hearth StewMeanwhile, heat the coconut oil over medium-low in a large soup pot. Add the remaining aromatic ingredients and saute about 5 minutes or until the onions are tender. 

Produce On Parade - Windy Hearth StewDefrost the spinach, then add to the soup pot along with the remaining sustenance ingredients. Bring to a boil over high heat, then reduce to low and simmer for 5 minutes. Cover and simmer for an additional 5-10 minutes, until the beans and sweet potato cubes are tender. 

Produce On Parade - Windy Hearth StewRemove from heat and add the conclusion ingredients. By now the rice should be done cooking and can be added as well. Stir to combine.

Strawberry Vanilla Cashew Milk + Alaskan Ski Train Photos

Okay, so I know you're all wondering how The Ski Train that Todd and I went on this weekend was. I'll give synopsis.  It’s was an all-day train party ride (like a legit, real life train) that went over 130 miles one way from Anchorage (we boarded in Wasilla), past Talkeetna to Curry where it stopped and let a bunch of cool cats like myself out to ski to our hearts content, which coincidentally was about four hours. On the way up we played Apples to Apples and ate a questionably large amount of Twizzlers and Pringles. We skied and played about, took a break to eat homemade vegan breakfast burritos, then piled back on, ate a bunch of food, drank a few adult beverages (some people more than others), and enjoyed the scenery on the way back home.

Here's a taste...

Highlights of the trip were:

  • The lady in the seat across from us dislocated her shoulder and exited the train in Talkeetna to seek medical care.
  • One of my coworkers was one of two people who were "confirmed missing". If you aren't on board at the appropriate time your ass gets left behind. Fo' real. A couple rescue team members stay behind with a tent and some food. Then, you pay one hefty fine for the train to come get you the next day. We were told the fee starts at $500...with an unknown limit. Yikes
  • Someone was lifeflighted. Seriously. A helicopter came and hovered right over the train all Black Hawk Down style, then landed beside the train and someone on a stretcher was boarded. Rumor has it this person broke their femur. Strongest bone in your body. I would know. Radiology and all. Bones are kinda my thing. And breasts. I can say that because I'm a Mammographer. 
  • There was a police car there too! In the middle of nowhere, because of the lifeflight thing I'm assuming. Apparently they can drive on the railroad tracks with this adjustment rail thing...omg, I had no idea. Did you know that?!

Anyways, it was a lot of fun and my first proper train ride. There were a few party cars (think passed out people in spandex), some quiet cars (I kind of wish we were on one of those) and a few middle-of-the-road cars, which we were in. If you really like being around people and that whole vibe, then I think the ski train would be outta this world amazing. I like most people in this world pretty much out of sight, hence, the blogging (it's kinda how I socialize, cue laughter). So, it was a little overwhelming for an anti-social, awkward, hermit grouch such as myself. I wish I wasn't that way, but I am. I just function better solo, or near solo.  

Honestly, I'd rather bring a picnic and ski out in the woods with just my pups, Todd and a few friends. However, I'm totally glad I did the ski train because it was a pretty incredible experience. See some trip photos at the end of the post! 

On Sunday after Todd and I recouped from our trip, I made him some delicious strawberry vanilla cashew milk.

Creamy and delicious with absolutely no processed ingredients, you'll only find whole foods in this milk. No added sugar either! This beverage is sweetened only with dates and strawberries. What I really like about cashews is that you can just throw 'em in the blender and since they're so creamy, there's no need to strain them as you would with almonds or shredded coconut. I do this a lot for smoothies. I think it's better than using a storebought dairy-free milk and it's so quick and easy!

Strawberry Vanilla Cashew Milk

Serves 1 

Note: If you don't have a high speed blender like a Vitamix, I would suggest soaking the cashews for a few hours. 

  • 1 1/2 cups water
  • 1 cup frozen strawberries (about 6 large), halved
  • 1/4 cup cashews
  • 2 medjool dates, pitted
  • 1/2 tsp. vanilla extract
  • pinch of salt

In a blender combine all ingredients and blend on high until smooth and creamy, about 2 minutes.

Healthy & Energizing Hazelnut Brownie Bars

So dessert won last night. Well, kind of.

Todd and I are going on The Ski Train this weekend! It's an all-day train party ride (like a legit, real life train) that goes over 130 miles one way from Anchorage, past Talkeetna to Curry Ridge where it will stop and myself and hundreds of other cool cats will ski their little hearts out. Then we'll all pile back on, eat a bunch of food, drink a bunch of adult beverages, and enjoy the scenery on the way back home. Photos to come!

I am so psyched you have no idea. It's usually sold out instantly and you can only get tickets if you happen to be a member of the nordic ski club...which we are. Oh! And there's a polka band too! Yes, a polka band. We'll be playing lots of Apples to Apples and Carcassonne and probably polka dancing as well. I dunno, I hear it's a thing. My brother and sister-in-law will be joining us! It will be epic.

Anyways, I realized I needed to make something to bring with us and I knew these brownie bars would be perfect. They've got oats and black beans, flax seed too along with hazelnuts to keep us fueled up for the big ski. Plus they're freaking delicious, man. I only allowed myself to one yesterday, so we can take the rest with us! Picture me, on a train, in a corner scarfing down these bars with a mouth-fulla chocolate. 

Healthy & Energizing Hazelnut Brownie BarsThese fudgy bars are reminiscent of brownies, not too sweet and packed full of healthy goodies. A nutritious energy bar that tastes like a brownie but boasts ample protein and complex carbs to keep you fueled throughout the day. Plus, they're done in a cinch and easy peasy. 

Healthy & Energizing Hazelnut Brownie Bars

Serves 10 

  • 1/2 cup hazelnuts, toasted and chopped
  • 2 Tbsp. ground flax seed
  • 6 Tbsp. water
  • 1 cup vegan chocolate chips
  • 1/2 old-fashioned oats, dry
  • 1 15 oz. can black beans, drained and rinsed
  • 1/4 cup unsweetened cocoa powder
  • 1 Tbsp. coconut oil
  • 1/4 cup water
  • 1 tsp. kosher salt
  • flake salt for sprinkling (optional)

Preheat oven to 400 F and roughly chop the hazelnuts. Spread on a baking sheet and toast at 400 F for about 3 minutes or until fragrant. Be sure they don't burn! When done, remove from oven and set aside. Reduce oven to 350 F.

Meanwhile, whisk together the flax and 6 Tbsp. water in a small bowl. Refrigerate until ready to use. 

Healthy & Energizing Hazelnut Brownie BarsIn a food processor, add the chocolate chips and the oats. Pulse until roughly chopped, about 30 seconds.

Now, add the remaining ingredients excluding the flake salt. Don't forget to add the flax mixture! Process until fairly smooth, scraping down the sides as needed, about 3 minutes. Healthy & Energizing Hazelnut Brownie BarsAdd the toasted hazelnuts and pulse to combine. 

Coat a bread pan with nonstick cooking spray. Pour in the batter and spread it out so it's smooth and even. The brownie bars will not rise at all in the oven. Bake for 60 minutes, rotating the pan halfway through. 

Remove from oven and allow to sit in pan until completely cool. Then, transfer to a cutting board, sprinkle with salt and additional hazelnuts. Carefully cut into 10 slices. Keep wrapped in saran wrap.

Good Deed of The Day: Um, so this petition is to stop the horrific dog meat trade in china and demand that they make animal cruelty laws. Yea. You'll definitely want to be a part of this one. Trust me. Imagine if your dog was stolen and caged, treated horrendously, then slaughtered and consumed. That's what I thought...sign this.
