This soup is umami, and as a vegan, that can be hard to come by.

Not in the mood to cook? Good, me neither. Don't worry though, I have a pretty darn good solution that doesn't involve much participation. If you're feeling lazy, take comfort in the fact that there's not a lot prep. If an ugly day reared it's head, a little chopping can be cathartic...so that's good news.
I have more good news. Eat soy. Especially if you have the sex chromosomes XX. There's a lot of misconceptions about soy...and starring in life as a mammographer, I know a lot about breasts and I know a lot about soy. People, soy is good for you. Try to consume it in a whole foods form though, don't be a junk food vegan. That's no bueno.

Serves 4 to 6
In a large saucepan bring vegetable stock and water to a boil. Meanwhile, chop vegetables, tofu and seaweed.

Add the vegetables only, as soon as they are all chopped. Once the stock and water comes to a boil, turn the heat down to low and simmer with the veggies for about 5 minutes.
Next, add the tofu and cook for about 3 additional minutes. Remove the pot from heat and add the miso paste and stir until combined. Now, add the seaweed and rice noodles. Ensure that all the noodles and seaweed are submerged and let them soak for about 10 minutes.
Done! There, you've made a delicious, healthy, quick meal and you're helping to prevent breast cancer! This is no excuse for not performing self exams or not having an annual mammogram...I'm talking to you, ladies over 40! Save those ta-tas and eat that soy!

Oh, macaroni and cheese. Sweet, sweet mac and cheese...the ultimate comfort food. Cheese isn't really on my vegan list of ethically edible items, however, so what's a comfort food seeking vegan to do? Don't worry my dear compassionate foodie, I have the answer.
This mac and "cheese", made with sweet potato is creamy, and rich, and as always the nutritional yeast lends that proper "cheesy" flavor. Honestly, I truly enjoy this version much more than the typical macaroni and cheese. Now that's saying something. Nostalgia is a hard thing to beat.

Serves 4
1 medium sweet potato, chopped
1 cup almond milk (or nut-free milk for a nut-free mac and "cheese")
1/4 cup nutritional yeast
1 tsp. pink Himalyan salt
1/2 Tbsp. liquid aminos or soy sauce
1 Tbsp. fresh lemon juice
1/4 tsp. mustard seeds or mustard (optional)
1 tsp. onion powder
1/2 tsp. chili powder
1 small garlic clove

Bring a large pot of water to boil and cook pasta. I used about 6 servings.
Bring a medium pot of water to boil, insert steaming basket, and add chopped sweet potatoes. Cover, turn to medium-low and let steam for 10 minutes or until tender. Meanwhile, add the remaining ingredients, except pasta (obvs), into a blender and whirl on high until the mixture is smooth.[gallery type="rectangular" ids="411,409"]
When the sweet potatoes are done steaming, add them to the blender as well and whirl on high again for about a minute or so. Add water as needed to achieve the desired viscosity. Stir in as little or as much sauce as wanted to the cooked pasta.
I'm a firm believe that any day, good or bad, can be improved upon by a warm and creamy dish of mac and "cheese". Especially when no animals were exploited in the process.
