Creamy Sage Polenta + Caramelized Onions and Portobellos

Do you ever feel fancy pants? Sometimes I do. Like if I go to the grocery store wearing something besides scrubs. If I rent a foreign film or wear shoes out other than boots or garden clogs. Brandishing a statement necklace (I have but one and you can bet I brandish it). Sometimes classy food can make me feel pretty snooty too.  Today's recipe is one classy dish indeed and definitely raised the stylish-food bar in our home. If you're in the need to impress guests or just want to sophisticate your palate (mine is très sophistiqué...okay, maybe not), then this is the perfect dinner for you. Honestly though, it's pretty good on a Friday night in yoga pants too.

Creamy Sage Polenta + Caramelized Onions and Portobellos

Serves 3

  • Onions & Portobellos:
  • 1 Tbsp. vegan butter
  • 1 medium yellow onion, sliced
  • 1 large portobello cap, halved and sliced
  • pinch of salt
  • pinch of ground black pepper
  • 1 Tbsp. balsamic vinegar
  • Cashew Cream:
  • 1 cup raw cashews, soaked
  • 1/4 cup water
  • 3 fresh sage leaves (1 Tbsp. chopped)
  • 1/2 Tbsp. agave nectar
  • pinch of salt
  • Polenta:
  • 1 1/2 cups water
  • 1/2 cup dry polenta
  • pinch of salt

Notes: Careful not to let the onions burn while caramelizing. Low heat is required, don't try to rush it. It should take about 30-40 minutes.

Begin by soaking the 1 cup of cashews in fresh water (enough to cover) in a medium bowl.

To cook the onion and mushroom, melt the butter in a large frying pan or cast iron pan over medium-low heat. Add the onion and saute for about 10 minutes, then add the portobello. Saute for an additional 20-30 minutes, until the onions are significantly shrunken and the onions have caramelized to a dark brown. Brown bits will accumulate on the bottom of the pan (this is called "fond"), but when the pan is deglazed it will come right off. However, if think it be starting to burn remove the pan from heat. Caramelizing takes a long time, so don't rush it.

When they appear caramelized, stir in a pinch of salt and black pepper. Deglaze the pan with the balsamic vinegar, scraping up the fond.

Meanwhile, drain and rinse the cashews then add them to a blender. Add in the remaining cashew cream ingredients. Blend on high until very smooth and set aside.

In a large saucepan, bring the water for the polenta to a boil over high heat. Add in the polenta while stirring as well as a pinch of salt. Continue to stir very often until smooth and all the water has evaporated, about 10 minutes.

Add the cashew cream to the polenta and stir well to incorporate until clump-free.

Serve hot as a bed of polenta, topped with the caramelized onions and portobellos.

Roasted Garlic Sesame Broccoli

Whenever I go to the store I always buy a couple heads of broccoli. I never have any idea what I'm going to use it for, which is highly uncharacteristic of me but I like to have it on hand because it encourages me to eat 1/2-2 heads per week and it's nice to throw into soups or other dishes. Sometimes I'll just steam it up and drizzle with a sauce, or top with cashews and nutritional yeast. Yesterday, however, I wanted to make something a little more involved. Now, this broccoli is hardly "involved" but it sure tastes like it is. This is a really quick recipe for dressing up broccoli with roasted garlic and a flavorful sesame sauce.

Healthy Tofu Curry

As a birthday present, I received two artisan tofu packages from a friend. One is tomato basil flavored and the other, curry. Yep, that's how cool being a foodie vegan is. You get unique tofu for your birthday. Obviously, I've been hoarding the stuff while trying to figure out what special dishes to make with them. I figured the curry tofu package was pretty self-explanatory. I was to make a curry with it. Which I did...it did not disappoint.

Produce On Parade - Healthy Tofu Curry

This curry is full of tasty veggies including cauliflower and sweet potato that meld beautifully with aromatic spices and flavorful tofu. No need for special tofu though, this dish will be just as spectacular with plain tofu!

Produce On Parade - Healthy Tofu CurryAny ideas for the tomato basil one??

Healthy Tofu Curry

Serves 6

  • Aromatics:
  • 1 Tbsp. coconut oil (I used unrefined)
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 2-inch knob of ginger, peeled and minced
  • 1 Tbsp. ground coriander
  • 1 1/2 tsp. ground cumin
  • 1 tsp.  ground turmeric
  • 1 tsp. kosher salt
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground black pepper
  • 1/8-1/4 tsp. chipotle chili powder
  • Sustenance:
  • 1 Tbsp. tomato paste
  • 2 cups vegetable broth
  • 1 small cauliflower, chopped into bite-size pieces
  • 2 medium sweet potatoes, diced
  • 2 large carrots, diced
  • 12 oz. extra firm tofu, pressed and diced
  • 4 medium fresh tomatoes, diced
  • Conclusion:
  • 2 Tbsp. lime juice
  • fresh cilantro, chopped (for garnish)
  • glass noodles, rice, or quinoa (to serve with curry)

Notes: I highly recommend prepping the ingredients before starting on this recipe. Measuring all the spices and chopping all the vegetables and tofu beforehand is a smart move for this curry.

In a very large, heavy-bottomed soup pot heat the coconut oil over medium-low. Now, add in all the aromatic ingredients and saute until the onions become tender.

Add in all the remaining sustenance ingredients and stir well to combine. Cover, turn to medium-low and simmer for about 20-25 minutes until the sweet potatoes and cauliflower are tender.

Next, blend in the tomato paste and the vegetable broth. Bring to a boil over medium-high heat.

Add in all the remaining sustenance ingredients and stir well to combine. Cover, turn to medium-low and simmer for about 20-25 minutes until the sweet potatoes and cauliflower are tender.

Once the vegetables are tender, remove from heat and stir in the lime juice.
