I'll be honest with you...I don't use protein powder. I'd rather throw some black beans in my smoothies, or peanut butter, or tofu. All fantastic sources of protein. I find protein powder to be too expensive, too artificial, and if it's vegan (which can be hard to come by) it can be grainy or chalky. So, you can imagine my hesitation when Sunwarrior contacted me about participating in their smoothie challenge.

However, protein powder has it's place in life and Sunwarrior is one of the very best. Todd actually uses it quite frequently. For someone that needs an instant meal and doesn't have much culinary experience (or desire to be in the kitchen), it can be a wonderful thing indeed.

This weekend, Todd ran up the mountain I grew up on and where he proposed. I was under the weather so I stayed home with Bailey. Bailey can't do this mountain. The last time Todd brought him, he had to carry him back down...literally.  It's exceptionally steep and very unforgiving, though for some reason it's been bestowed the unfortunate and ironic name "Lazy Mountain". A joke, no doubt. I knew when he came back he would need a recovery drink and this Malted Chocolate Shake was just the thing. I had to put it in the fridge to keep myself from drinking all of it! Recipe development...almost as strenuous as running up a mountain...

I confess I was really pleasantly surprised by the Sunwarrior products. I have tasted a few other vegan protein powders in the past couple years and I was less than impressed. Even the fermented barley powders and liquid light  were really not bad! The immune shield liquid, however, was straight-up horrible. Though I'm pretty sure it's not the point to taste delicious. I really like that their products are free of GMOs, dairy, gluten and anything artificial. They also weren't gritty like other the powders I've tried.

Malted Chocolate Shake

Growing up, my grandmother used to make me malted chocolate shakes. Alas, the instant chocolate malt powder isn't cruelty-free, so I decided to make my own! This is a protein packed shake thanks to a little help from Sunwarrior.

Yield: 1 shake

Ingredients

  • 1 cup soymilk
  • 1/2 frozen banana, chopped
  • 1 package (21 g) Sun Warrior Classic Protein Powder Chocolate
  • 1-2 tbsp barley malt sweetener (I used powder, but syrup would work)
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tbsp ground flax seed
  • pinch of salt

Cooking Directions

  1. Combine everything in a blender, and blend for a minute or two until completely smooth. Serve cold.

I'm so glad this case is being presented in front of Congress. How totally messed up are we? Studying depression and trauma inflicted upon baby monkeys being separated from their mothers so we can better understand these illnesses in humans. If humans and these monkeys are close enough related that it makes sense we could implement this study...doesn't that prove that it's totally barbaric and horrifically cruel that these studies are being carried out? If it's not ethical to do this to humans, it shouldn't be to do it to moneys either...or any other sentient beings. Makes me sick inside.

Last year, for Christmas, all I wanted was The Flavor Bible. At long last it was mine. I find myself using the book constantly in my recipe development, and immediately ran around to friends and family spreading the gospel of it's profound necessity! It is my bible...fo' real though.

A couple months later, I discovered that Karen Page was coming out with The Vegetarian Flavor Bible. Once again, I knew I must have this book. It's life changing, you guys. If you love to cook and create unique recipes, this book will greatly expand your resource of creativity in the kitchen. Do you find yourself wondering what flavors pair best with juniper berries? Don't worry, Karen has got you covered. 

With a panel of experts like, Dr. Neal Barnard (founder of Physicians Committee for Responsible Medicine), Makini Howell (chef-owner of Plum Bistro), Isa Chandra Moskowitz (renowned cookbook author), and Angel Ramos (executive chef of Candle 79) weighing in, along with many others, you can rest assured this is a vast wealth of seriously sound advice.

The Vegetarian Flavor Bible begins with expanding upon what it means to eat a vegetarian diet, and the positive health, emotional, and environmental outcomes of consuming a meat-free diet. Karen discusses what carbs, proteins, fats, etc. are and where they're found, along with how to obtain essential vitamins and minerals in vegetarian fare. I found her rather expansive timeline history of vegetarianism (starting in 3000 BCE to present day!) particularly interesting. Karen also delves into the many cultures and worldly cuisines of cooking and diet, and how they relate to vegetarianism. This isn't just a cookbook. It's a brief Vegetarianism 101 class!

Besides discovering the self-explanatory, what foods/flavors pair well with other foods/flavors, this book also informs the reader about a great many other things about each food item such as:

  • season of the food
  • volume (whether it's loud or quiet)
  • health highlights
  • nutritional profile
  • cooking techniques 
  • tips for preparing and/or serving
  • botanical relatives
  • possible substitutes

I don't think kelp is in the original book...I love my kelp granules. They're great if you're needing an "ocean" flavor auroa to a dish. 

My very favorite part of the book are the "Flavor Affinities". These are about three to seven different foods that create utter magic when combined all together. For example, a couple flavor affinities for asparagus are as follow:

  • asparagus + lemon + pecans + rice 
  • asparagus + couscous + orange 

The work is done for you! With easy laid out food combinations, cooking is made simple and you'll know whatever you think up will turn out fabulous! 

This is the most used book in my entire house. I look to it for almost every recipe. How else could I have come up with my Nutmeg Scented Roasted Sunchokes? Creativity is limitless with this bible of food pairings. The more you learn about what foods compliment each other and the flavor, volume, and season of foods the more your cooking knowledge will grow and allow you to become a better cook!

What if I already have the original flavor bible?

You might be wondering if you should acquire the vegetarian version of this book if you already have the original. My answer is a resounding, "Heck yes!" The vegetarian book is actually larger than it's non-veg counterpart. There are some of the more "veg-usual" foodlets like tofu, agar agar, goji berries, millet, etc. that just aren't in the original flavor bible.

I have a new favorite cookbook and it's all about the almighty pressure cooker.

It's a cherished thing of mine, to look at cookbooks...but I rarely make anything out of them. There's a variety of reasons for this. For one thing, it's my absolute biggest pet peeve when authors have a recipe within a recipe. You know how it goes. Here's a recipe for pancakes, but first you have to make this vegan egg creme and for that please turn to page 35. Oh, you wanted frosting with this cupcake recipe? That's on page 98. It just really irks me. Why can't everything be included on one page? It's a silly thing, but as soon as I see this Russian doll nonsense...recipe dismissed. Second, I use what I have on hand and use recipes as a loose outline mosty. This is a large departure from my teenage days of cooking where I always followed the recipe exactly as stated. It wasn't that I didn't have a lot of experience cooking, I just didn't have a lot of kitchen confidence. 

Enter the pressure cooker. I got my fancy pants one, many years ago (at least eight now) from a dear aunt. I confess it sat, unused, for a great while. Nowadays, I'd venture to say it's one of my most used kitchen pots. I use it for my Friday Soup, and to cook things up in a snap. It's used at least two to three times per week! Applesauce, lentils, quinoa, assorted vegetables, you name it. So, you can imagine my excitement when I found out about a vegan pressure cooking cookbook!! This was a cookbook I must have!

I feel very fortunate to have been gifted this book to review. Usually, when I first receive a cookbook, I go through and tab all the recipes that I want to make in the future. There's usually about five I'm interested in. No joke. I find many to be too complicated, too simple, and/or not healthy enough. Oftentimes, Alaska just doesn't lend itself to exotic ingredients. Tamarind paste? Been searching for the stuff for months! This cookbook though? I couldn't stop tabbing everything! 

I've made JL's pressure cooked tofu scramble five times now! I used to make my tofu scramble in a frying pan. It was kind of crispy and left a giant mess to clean up afterward. It was good, but not exceptionally eggy. This scramble though is light and fluffy and wet, just like I remember my scrambled eggs. I'm already planning on making some of her soups. And I even made seitan! OMG, you guys! Homemade seitan is a new staple.

Okay, I need to have a heart to heart with my vegan and veg friends here. If you don't have a pressure cooker, you might be feeling a little sad right now. Understand that I am somewhat minimalist and working towards becoming even more so (get rid of all the stuffs!!!) However, I am telling you that  you might really want to consider getting a pressure cooker. These bad boys are absolutely the most handy if you consume a lot of soups, grains, beans, and or vegetables - like a health vegan should! It's a really fast, nutritious, and flavorful way to prepare foods in a short amount of time.  Pressure cookers can cut cooking times by 70%! So you can prepare your favorite foods in 1/3 the time they would normally take!

I really like that JL Field's first chapter in her book is Pressure Cooking 101. It explains a lot of the misconceptions regarding pressure cooking and addresses old fears of using such a contraption. She informs you how a pressure cooker actually cook things so fast and some things to watch out for, as well as what cooks well in the cooker and what does not. She also goes over the different types of pressure cookers. This is really handy if you're planning on buying one, or have one but it's just been collecting dust because you don't really know how to use the thing. The chapters are divided into categories like beans, soups, sides, sauces, one-pot meals, and she even has a dessert chapter! Oh my.

Today, I am very excited to have been granted permission to share her seitan recipe with you. If you've never made your own, holy smokes, is it good. The stuff is quite expensive to buy in the store and you'd never guess how easy it is to make at home. Not to mention fast with the help of a pressure cooker! I'm already planning on make more tonight!

There were a few changes I made when making my seitan. First, I didn't have blackstrap molasses (and I had run out of regular molasses as well), so I used agave nectar. I actually did have avocado oil, but I don't see why olive oil wouldn't be okay to use. I found the dough to be a bit wet after looking online at some other seitan making videos (yep, I'm that person), so next time I might add a little less broth to the dry ingredients. I found the dough hook on my electric stand mixer to be of no help, so I just kneaded the dough in the bowl. Save the cooking broth for use next time you  make seitan (or use it in a soup), so as not to waste it. Stay tuned very soon for a stuffed seitan recipe. 

A note on the vital wheat gluten and chickpea flour. For the gluten, I had to buy it on Amazon.com because my local stores here in Alaska either didn't have it or were out. As for the chickpea flour, I've seen other seiten recipes that call for the same amount of a different flour or it's just omitted altogether, using extra gluten. The chickpea flour is used to make a lighter and fluffier seitan. However, it's not "vital"...get it? Hehe.

I don't think I'll ever buy seitan from the store again. It's just too easy to make myself and I love that I can customize it. I've read it freezes well too, so don't worry about making huge batches of the stuff!
